Yesterday was a pretty (really) good day, the sun was shining, I met some really nice people, had a great time, and some good (and very caffeine rich) coffee.
When Erik came home he had bought me flowers and we went for a walk, and then we bought falafel with us on the way back home. I thought about baking a cake, but I’ll save that project for the weekend.
I was up a bit too early in the morning, but we went to bed earlier (not) and I thank myself for that today (not) ;).

I’m giving it a try this month too, but I’ll cheat. I took some pictures today and yesterday that I thought matched some of the challenges, so I think I’ll take 31 pictures and make 3 or 4 posts instead of posting i.e. one picture a day (I understand this is the thought behind the photo challenge..) .. but.. ha ha! I can’t come up with a good excuse. #11 is the kitchen/bedroom/living room in my apartment, the kitchent is to the left ;).

Yesterday was a sunny day, and a good day. We took a walk trough the city in the morning and walked by people demonstrating. We thought it would be more people there than it was, maybe the sunny weather was more inviting.
In the evening I went to Lund and Anna and went to listen to the choir that annually (to welcome the spring) performs at the stairs to the main building of the Lund University, which they also broadcast on TV.

I made banana oatmeal cookies yesterday. They might not look 100% good, but they taste 100% good :) I found the recipe on a WordPress blog, see the post baking inspiration, but changed it slightly.
Recipe:
Preheat the oven to 200 degrees celsius.
Mix 50 g butter, 1 tsp vanilla, and 125 ml brown sugar until fluffy. Mash 1 banana and add it to the mixture.
In a bowl combine 250 ml flour, 1 tsp baking powder, and 125 ml uncooked old-fashioned oats.
Fold in 100 ml of chopped dark chocolate, or chocolate chips.
Use a spoon and scoop the batter onto baking sheets with parchment paper. You’ll get ~16 cookies. They don’t “spread” so use a spoon to spread out the batter. Bake for about 10-15 minutes, and let the cookies cool before you remove them from the baking sheets.

Recept:
Vispa 50g smör och 1,25 dl farinsocker tills det är lite fluffigt. Mosa en stor banan och rör i den i smeten.
I en skål, blanda 250 ml vetemjöl med 1tsk bakpulver och 1 tsk vaniljsocker.
Blanda ingredienserna från de bägge skålarna och rör till sist i 1dl hackad choklad, chocolate chips är bättre, men jag kunde ine hitta några i affären.
Det blir ca 16 kakor. Använden sked för att forma smeten och klicka ut den på plåtar med bakplåtspapper på. Kakorna flyter inte ut såbredut smeten med en sked till den storleken du vill ha. De kommer jäsa på höjden.
Sätt in i en 200 grader varm ugn i mellan 10-15 min, tills de är lite ljusbruna. Låt stå på plåten tills de kallnat.

I made these cookies in my mother’s kitchen. My mother has incredibly many bowls, plates and things you need for baking, so it was pretty much fun. Then we had coffee in old-fashioned cups (see the picture above), which was kind of a “time clash”, these cookies are to me pretty “modern” :)

It’s not too late yet, it’s only the 23d today :) I know someone who needs to write some job applications, which I will do. Ok, I will do it, later. No I’d better do it now.
When I’m done I’ll go outside for a photo-hunt. I can’t wait! I Love to have my bike here in Malmö because I don’t have to take the bus, and biking is faster than walking :)
Here are some of the pictures. I especially like #3 for a funny reason ha ha! Once I came up with the idea to say “hi” to Erik through the mail slot. #2 is a very colorful LP disc. #17 I don’t like to do the dishes. #19 is an orange orange. #5 are tine basil plants. #10 is a box of very cold raspberries.
I’ll update with more pictures until the 30th of April :)

Last week we drove by a flea market and today I went there to see what they sold. They had a lot of things there, much crap, but also some good things. It’s perfect to go to flea markets on rainy days.
Yesterday the sun was shining, thank god :) We went to have a look at one of Erik’s friends’ new apartment and had some champange before we went to The Green Lion Inn for some food. I had beetroot risotto with Chevré and yellow beets, and Erik and the other guys had fish and chips. They had like 100 sorts of beer there, but since I’m a terribly bad at drinking anything with alcohol in it I had a diet Coke ha ha!
Some hours later (around 1AM) we walked home, and I stopped by at Mc Donald’s to buy a cup of coffee and a chocolate muffin :)
A pretty good weekend.

Cherry blossom
Visst är det härligt med våren? Månadens tema på Söta Saker är Sagolikt, och vad är inte mer sagolikt än körsbärsblom?
Jag passade på att lyxa till det lite extra och gjorde en moussbakelse fylld med vanilj- och hallonmousse. Botten är “brownie-inspirerad” och lite för god för ens eget bästa (lägg hackad mörk choklad i smeten om du gillar det). Chokladbotten passar utmärkt till den lite syrliga hallonmoussen, ovanpå är det en hallongéle som också bryter av lite mot det söta.
Sagolikt gott måste jag säga, vi blev förvånade över hur bra det smakade! hoppas det goda syns i bilderna. Recepten är egenkomponerade så att inga ägg behöver slängas. Bon apetit!
Recept:
Det krävs lite förberedelse, men så fort man är igång så går det enkelt. Jag gjorde 6 stycken bakelser, men det går lika fort att göra dubbelt så många. Det blir chokladkaka över, men den går ju superbra att äta som den är :)
Innan du börjar, se till att du har allt hemma. Gör 2 stycken strutar i bakplåtspapper som du behöver för att spritsa ut moussen. Gör 6 stycken cylindrar i overheadfilm.
Det går precis lika bra att göra en stor kaka istället för flera små, men den behöver stelna något längre.
Kakan
100 g smör/margarin
2 dl socker
3/4 dl kakao
2 ägg
2 msk sirap
1 nypa salt
1 dl mjöl
Vispa smör och socker mjukt och lite fluffigt, tillsätt kakao, sirap och salt, vispa. Tillsätt äggen ett och ett. Rör sedan försiktigt i mjölet. (Det ska inte vara bakpulver i kakan). Häll i en smörad och bröad (“bröa” med vetemjöl) form, sätt in i ugnen på 175 grader i ca 15 min. Kakan ska vara lite kladdig. Låt kallan.
Vaniljmousse
1,5 gelantinblad
2 äggulor
3/4 dl florsocker
1 dl grädde
1 tsk grädde
3/4 dl vaniljyoghurt
1/2 tsk vaniljsocker
Vispa ägg och florsocker vitt och pösigt. Lägg gelantinbladen i kallt vatten (lägg 3 blad i vatten, du behöver 1,5 st till hallonmoussen). Vispa grädden (vispa 2 dl grädde på en gång, du behöver 1 dl till hallonmoussen). Smält gelantinbladen i en kastrull i 1 tsk grädde och rör i vaniljyoghurten.
Blanda äggblandning, grädde, yoghurt och vaniljsocker. Ställ åt sidan.
Hallonmousse
2 äggvitor
1 dl socker
150 g tinade hallon
1 dl grädde
1,5 gelantinblad
Vispa äggvitorna till fast skum. Vispa i sockret gradvis och vispa tills smeten är glansig och vit.
Passera hallonen genom en sil så att kärnorna kommer bort. Lägg lite av hallonpurén i en liten kastrull och värm på, låt sedan 1,5 stycken av gelantinbladen smälta där i. blanda i resten av hallonpurén.
Blanda hallon, grädde och maräng. Ställ åt sidan.
Sedan..
Stansa ut chokladbottnar med cylindrarna som är gjorda av overheadfilmen. Då får du en kaka som passar precis. Fyll pappersstrutarna med moussen (du behöver ingen tyll, klipp bara av toppen så den blir lagom stor). Börja med den vita och spritsa den utmed kanterna (se bilden). Fyll sedan upp mitten med hallonmoussen. Toppa med vaniljmoussen. Ställ i kylen.
Gör gélen, passera 1 dl hallon i en sil, värm sedan purén med 1 tsk socker och 2 msk vatten. Lägg 1 gelantinblad i kallt vatten. Efter ca 5 min krama ut gelantinbladet och smält det i hallonpurén. låt svalna i rumstemperatur, när det är sådär lagom tjockt, fördela på bakelserna och låt stelna i kyl. Ta bort plastfilmen innan servering. Dekorera med grädde och bär. Klart :)
(I made these little cakes this weekend and they turned out great! They could have been bought in a bakery. It’s “brownie cake” with raspberry and vanilla mousse. I was inspired by cherry blossom, my favorite flowers. This is also my contribution to Söta saker.)

Have you seen the movie Arn? They filmed it in this area of Sweden. The scenery is beautiful here.
I’m spending the weekend with Erik and his family. Yesterday we took a walk in the woods outside the house. It was really nice but cold. The spring is here, but sometimes it feels like we live in Siberia.. I can’t wait for the summer.
This morning we saw some deers in the garden ha ha! it was kind of funny. I have to show you a picture of some candy we bought the other day in a Polish grocery store in Malmö. It’s fun to eat something that you don’t really know what it is. But it tasted pretty good ;)

I can’t understand what it is with “mazariner”, they’re delicious! (mazarin= short bread crust filled with something almond(y), iced with pink/white icing) My mom, sister and I had “fika” at one of my favorite cafés in Malmö. My sister had the cake with the strawberry on :)

We made those a while ago. It’s strawberry muffins with a cream cheese topping. I used a banana muffin recipe, but substituted mashed banana with mashed strawberries :)
Maybe you’re wondering why I could die for a cupcake. Because I’ve been sitting in a classroom for five hours without a break. Sigh!BUT it’s the last day in school so I’m kind of enjoying every moment :)

On the other side of the street where Erik lives there is an apartment with large windows :) Long time ago it was a shop there.
They always have a bowl with cat food in the window, and some months ago there was also a cat bed. BUT we had never seen the cat. I walk past the window every day so this is probably why I think about it ha ha! it might sounds like I’m crazy.
Anyways, they removed the cat bed, and since I’m so childish I thought “oh no the cat is dead!”, but it wasn’t. Now I’ve seen the cat, which is pretty cute, but Björn Björn is the cutest. The picture is a bit dark since I took it with my Iphone in the evening.. :)

Have you thought about something?
Until you are in a certain age people keep asking you “what do you want to be when you grow up?”.
When you’re five they expect you to answer astronaut or maybe rockstar. When you’re a bit older they expect you to say nurse or maybe teacher.
There is one thing I can’t understand. It’s like we have to be “something”. Everything else is confusing people. Just because you don’t have a title doesn’t mean you are no one. Right?
A part of this is: Who says just because you are a nurse, you have to have that job for the rest of your life. No one!
Next time someone asks me I’ll say when I grow up I want to be Bonnie Tyler and own a show like Oprah. Dah! The funny thing is people still asks me and I’m 25. Haha!

Doesn't look very good, but tastes very good :)
I didn’t think I liked swiss roll..but I was wrong :)
I don’t know if Swiss roll/cake roll is the correct translation of rulltårta, but I think so.
Yesterday I came up with the idea to make two kinds of rulltårta at the same time. I made “boxes” out of baking paper, and poured the batter in them.
One of the swiss rolls is filled with raspberry jam, and the other one is a banana cake with chocolate and hazelnut filling.
Honestly, I have never really liked swiss roll. I don’t like the sugar that you “coat” it with, but on the other hand it helps the cake from sticking to the paper/plate :). I have to say that this recipe was really good, and after a second thought – I think I like it.
Recipe:
3 eggs
150 ml sugar
150 ml flour
50 ml corn starch (Potatismjöl är bättre om du har det)
1 tsp baking powder
1 tsp vanilla (vaniljsocker)
2 Tbsp milk
(1 ripe banana, mashed)
..
It’ll take no time to make the batter, so set the oven temperature at 250 degrees celsius.
(if you want to make two swiss rolls: make two “boxes” out of baking paper. otherwise just one. I like to do it this way because I don’t have to clean the baking sheet afterwards :))
With an electric mixer, beat the eggs and the sugar until light and fluffy. Combine flour, cornstarch and baking powder.
Fold in the flour mix into the egg mixture. Add the milk.
(Divide the batter into two bowls. Add the mashed banana to one of the batters.)
Put in the middle of the oven, they’re done after maximum 5 minutes.
When they’re done (check with a tooth pick) – sprinkle with sugar, turn them upside down, and remove the paper. Let them cold when you make the filling.
Filling:
1 Tbsp butter (softened)
2 Tbsp cream cheese
2 Tbsp coccoa powder (not sweetened)
4 Tbsp of powder sugar (you might need more, add more until you think it’s thick enough)
(1 Tbsp coffee syrup, see the picture above)
Mix all the ingredients with an electric mixer.
Spread jam or chocolate filling, and gently roll the cakes. It’s hard to explain, but it’s easier to roll them if you us the baking paper to do so. It seems like the cake doesn’t crack then.
Store them cold.
I think the idea with the cream cheese filling was pretty good, it’s not healthy, BUT it’s better than butter cream :)

Today we made pancakes. I only post about food these days haha!
Here comes the recipe:
Mix 250 ml of flour with 300 ml milk. Add 3 eggs and whisk. Add another 250 ml of milk + 1 Tbsp melted butter + 1/2 tsp salt.
Fry in a frying pan, you shouldn’t need extra butter/oil.
Serve with jam, ice cream, fruit or something else you like :)
We had pancakes with ice cream for lunch. Erik has a sore throat so we (he) found a very good excuse to eat ice cream :)
